Zucchini Soup

I know what you are thinking....green soup!  Green as it may be, it is a creamy and delicious soup that our family loves.  And why wouldn't it be good...it has a whole stick of butter and 2 cups of milk!  Even my boys love this soup...they have affectionately named it Christmas soup since it is green like a Christmas tree.

And what could be better with soup than a bacon sandwich!

Yes, that is real white bread!  We have tried them on wheat bread and well, they are just not as good.  So, every once and while we splurge on a loaf of white bread!

Here is the recipe if you want to try it for yourself!:)

4 cups sliced zucchini (I cut mine length wise and then scoop out some of the seeds with a spoon, then I slice them in half moon shaped slices)
1/2 cup of water
2 chicken bullion cubes
1 large onion chopped
1 stick of butter
2 tablespoons of flour
2 cups of milk

In a sauce pan bring zucchini, water, and bullion to a boil.  Reduce heat and simmer 15 minutes.
In a frying pan saute onion and butter until onions are translucent.  Push onions to one side and add flour to the butter.  Next add milk.
Add the milk and onion mixture to the zucchini and simmer 10 minutes.
Blend soup in blender until smooth.
Enjoy!

I'll definitely try that one. Also, there is a white-wheat bread by Nature's Own you can 'trick' the boys into eating. It's a little more $, but a bit healthier too.

sounds wonderful! I'm going to try that one for sure....the white bread bacon sandwhich made my mouth water :) yummo!!
